I use a plugin to create a project variable where user write his name once and doesn’t to have to write it many times .
But i don’t know how to completly delete this project variable (not only his value)

My guess would be to try and open the project on QGIS. There you can go to Project menu > Properties (or press Ctrl + Shift + P).
On the Dialog that pops, go to the Variables tab (on the left menu bar). If you touch the name of the variable (and it isn’t one of the default ones created by qgis), the red minus button should enable and allow you to delete that variable.
